Two Delicious Fresh Truffles RecipesTruffles are ones of the finest chocolate blends you can buy. Once reserved to the very wealthy people, you can now find them in almost any chocolate store. If you would like to make a gift, why not choose some fresh truffles instead of the ordinary pre-wrapped chocolate bars. However, it is not absolutely necessary to buy truffles, as they can be prepared in your own kitchen with relative ease. Here are some fresh truffle recipes for you to try at home. Fresh Truffles Recipe #1: - Hazelnut or Almond Truffles To make almond or hazelnut chocolate truffles, you will need the following ingredients: 2/3 cup finely ground toasted almonds or hazelnuts, 7 T melted butter, 3 oz. bittersweet chocolate, 3 oz. milk chocolate, 1 T Amaretto (for almond) or 1 T Frangelico (for hazelnut), 4 egg yolks, 2/3 cup confectioner's sugar, 1/2 tsp. vanilla extract, 1 1/2 tsp. almond extract. First, you need to chop the nuts in a food processor until they are very finely chopped. Slowly drizzle in 3 tablespoons of melted butter and process till well mixed. Heat the remaining butter until it is very hot, but be careful not to burn it. Now you can add the chocolate and stir until everything is mixed well together. Beat the eggs in a separate bowl until they become foamy. Add gradually the sugar, the extracts and the liqueur until the mixture is well stirred up. Use the mixer to slowly beat in the nut mixture, and then gradually beat in the melted chocolate mixture. Beat until smooth and well mixed. When you are done, place in the refrigerator and let the mixture chill (at least 30 minutes). Place your choice of coating in a bowl (you can use various ingredients for coating: toasted coconut, chopped nuts, unsweetened cocoa, powdered chocolate). Now take the chocolate mixture out of the fridge and scoop out a teaspoon full of the truffle mixture and, using your fingers, roll it into a ball. Work quickly as the heat of your hand will quickly start melting the chocolate. Drop ball in the coating bowl you have prepared earlier until you have 4 or 5 balls in the bowl. Now gently roll the truffles in the coating mixture. When done, place the truffles in an air tight container and keep them in the fridge until you want to savor them. Fresh Truffle Recipe #2 - Grand Marnier Truffles For this fresh truffle recipe you will require: 4 T melted butter, 4 oz. bittersweet chocolate, broken into small pieces, 4 oz. milk chocolate, broken into small pieces, 4 T Grand Marnier, 4 egg yolks, 1 1/4 cup confectioner's sugar, 2 tsp. orange extract. First, heat the butter until it gets quite hot, but not until it gets burnt. Remove from the heat source and add the chocolate, which should already be broken into small pieces. Stir the mixture until it gets evenly mixed and melted. Beat egg yolks until foamy in a separate bowl. Now you can add the sugar, the orange extract and the Grand Marnier cognac. Set the mixer to slow or medium speed and beat slowly the whole mixture. After it gets very smooth and consistent, place in the fridge and let it chill down. In a separate bowl prepare the desired coating. Get the mixture from the fridge and, using your fingers, create small chocolate balls and place them in the coating bowl. Be sure to roll them a few times to get them all covered with the coating. With both recipes, remember to put the fresh truffles in the fridge until you are ready to serve them. |
