Wedding Truffles Recipe #1

First, you need to know the necessary ingredients:

You will need 1 cup of Oreo Cookies (have them very finely cut), 12T melted butter, 6 oz. white chocolate (brake it into small pieces), 5 egg yolks, 1 ¼ cup confectioner's sugar and 1 tablespoon of vanilla extract.

Take the cookies and chop them very finely in a blender. Slowly drizzle in 6 tablespoons of melted butter and process till well mixed. Take the remaining tablespoons of butter and heat them in a small saucepan until very hot and bubbly (but be careful not to let it burn). Now remove the mixture from the heat source and add the white chocolate. . Stir constantly until smooth and melted. Take a separate bowl and beat the egg yolks until foamy. You can begin to pour in the sugar gradually, add vanilla and continue to beat until the mixture gets thick. Now set the mixer on a slow speed and beat in the cookie mixture. Then gradually beat in the melted chocolate mixture. Beat until smooth and well mixed. Place the entire chocolate cream in the fridge until it gets firm. While the mixture is let to cool down, prepare the coating (you can use anything you want for coating, from toasted coconut, to chopped nuts or powdered chocolate). Take the mixture from the fridge and form little chocolate balls, which then put in the coating bowl. Roll them thoroughly until the entire chocolate truffle is evenly and smoothly coated. Keep them in the fridge until the wedding day.

Wedding Truffles Recipe #2

Another recipe includes 1 cup of peanut butter chips, 3/4 cups of butter, 1/2 cup cocoa, 1 can (14 oz) sweetened condensed milk and 1 tablespoon vanilla. Heat slowly the peanut butter chips with the butter until they melt and mix together. Then, pour in the cocoa until the composition is very smooth. Then add the condensed milk and vanilla and cook and stir until thickened and well blended, for about 4 minutes. Remove from heat and let it chill until it is firm enough to handle. You can now shape them into 1 inch balls you can roll in the desired coating. You can keep them in the fridge for about two or three weeks.
